1/2 c Vegetable stock
2 Onions, sliced
1 c Diced celery
3/4 c Tomato puree
1/2 c Vinegar
2 tb Sugar
2 tb Capers
4 tb Raisins or currants, plumped

Preheat oven to 400F. Place the eggplants on a

    >LOL Frances, I am not thrilled with bell pprpees, but my 10 year old loves them and wanted them in there. I really came out so good and it was fun to have her help make it too so she would be more likely to eat it. My corn is coming in nice too, so watch for upcoming recipes with that!
